The name itself (pronounced 'a-nock')\nis Gaelic for the nearby Knock Hill.\nTo create anCnoc, they still use their original style copper pot stills and worm tubs to condense the vaporised alcohol. It's these traditional techniques which help to create the distinctive, modern flavour.\nThe whisky is aged in American and Spanish oak barrels and the casks are rested quietly in traditional dunnage warehouses; it's a simple process but one which demands perfection.\nThankfully, the Distillery Manager, Gordon Bruce, and the 'Men of Knock' are perfectly suited to this task.
