The most-ordered drink in SA, done properly. It’s all in the ratio, the ice and the garnish.
A great G&T is simple, but the details matter.
The ratio
Go 1 part gin to 2 parts tonic. Any more tonic and you drown the botanicals.
The ice
Fill the glass with ice — really fill it. More ice melts slower and keeps your drink crisp, not watery.
The garnish
Match the garnish to the gin: citrus for classic London Dry, rosemary or cucumber for floral local gins.
Pour over the back of a spoon to keep the bubbles, stir once, and serve immediately.
