J.C. Le Roux Cap Classique is crafted according to the time honoured French method by initiating a second fermentation of the base wine in the bottle to create the sparkle. Our Winemaker specially selects predominantly Pinot Noir and Chardonnay grapes traditionally used in the making of French Champagne for J.C. Le Roux's Cap Classique.
Our signature, award-winning Cap Classique, spent 36 months on the lees with the sediment removed by the traditional method of remuage and dégorgement. It is dry, soft and elegant with fresh citrus notes from the Chardonnay and a full mouth-feel derived from the Pinot Noir grapes.
