Made from a mash of malted and unmalted barley and then triple distilled in copper pot stills, Redbreast 12 boasts the flavour complexity and distinctive qualities of Pot Still whiskey. Matured in a combination of Bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts, the distinctive Redbreast sherry style is a joy to behold in each and every bottle.

Redbreast whiskey takes its name from the small ‘Robin Redbreast’ bird, with the inspiration originating in 1903 with the then chairman of Gilbey's Wines & Spirits Import Company, who was an avid bird fancier. The first official reference to the brand name 'Redbreast' appears in August 1912, when Gilbeys were selling "Redbreast" J.J. Liqueur Whiskey, described as one of their "famous" brands. Redbreast is one of a handful of single pot still whiskeys in existence today and one of only two to have been produced almost continuously since the early 1900s.

The nose discloses dried and ripe fruits, such as yellow raisins, clementine skin, peach, and dried mango, along with notes of honey, vanilla bean, and caramel. The palate is where the blend of malted and unmalted (green) barley really shows itself. Redbreast is at once full, soft, mouth-filling, and gently creamy, but quickly becomes nutmeg and pepper-spicy and a little nutty, with both the satisfying bitterness of hazelnut skin and round fatness of hazelnut meat. It feels plush and a little slick on your tongue, but snaps like a cracker into a dry exit.

The premium Irish Whiskey, Redbreast 12 Years Old is not a shot-and-a-beer Irish whiskey, it’s better as a neat pour to be savoured and sipped.
