Receiving of grapes during the morning around 16°C. Crushing and de-stemming and the mash is pumped to open fermentation tanks. Cold soaked for two days at 10-15°C then yeast was added so that fermentation could start. Fermentation took place at 28-30°C. Punch downs 3 times per day. No post fermentation maceration.
