In order to achieve a luscious, juicy wine, we try to have as little intervention in the cellar as possible. Simply de-stemmed, the whole, uncrushed bunches are transported using only a gravity flow system. Whole berry maceration is followed by fermentation with natural yeasts, racking and one year’s maturation in oak barrels. The result is a velvety wine with softer tannins and classical varietal characteristics.

Springfield is a wine estate in the Robertson Valley, in the Western Cape of South Africa, and it is owned by the Bruwer family. The wine is made on the estate itself, and the family's choices in the cellar, from wild-yeast ferments to gravity flow and long ageing in barrel and bottle, are what the wines are built on.
Most Springfield wines are fermented using natural wild yeasts found on the grape skins. In the red wine cellar the grapes are moved by gravity flow and fermented whole, without pumps, crushers or presses. The wine is bottled unfiltered and unrefined wherever possible, and it is aged for 2 years in barrel and up to 4 years in bottle.
